It was Sunday, March 9, 2020, when our beloved food trailer had to close its doors due to the Covid-19 outbreak. Faced with uncertainty, we made a bold decision to bottle our popular barbecue sauce as a means to adapt and continue earning a living. In the midst of challenging times, we found solace in focusing on something positive and keeping our passion alive – providing our guests with a “double portion” of heartfelt hospitality, only this time in the form of bottled sauces. And thus, our journey into the world of Texas BBQ sauces began.
Our initial lineup consisted of three BBQ sauces: Texas Tang, Sweet Heat, and spicy Rebel Red. These sauces quickly gained popularity, delighting thousands of customers with their rich flavors and perfect pairing with beef brisket, pork, sausage, poultry, and seafood. A year later, Candy Jalapeno® was born and has become a favorite of everyone who tries it.
Leading the charge at Gabrick Sauce Co. is Mark Gabrick, an expert in the art and science of barbecue. With comprehensive knowledge spanning the entire BBQ spectrum. Mark’s journey started growing up in Kansas City and then as a barbecue pit-master in Austin, Texas, and Florida. Under the mentorship of renowned competition circuit pit-masters through the Florida BBQ Association (FBA), he mastered their coveted “bag of tricks.” Mark’s exceptional skills led him to establish a highly popular BBQ food truck during the food truck craze, drawing long lines of devoted fans and sauce-covered smiles, which was recognized by the Mayor of Tampa and regularly invited to City events.
Recognizing Mark’s expertise, restaurant industry leaders sought his guidance in BBQ restaurant creation. He has provided consulting services to esteemed establishments and collaborated with the President of the National Restaurant Association. Mark’s success extends beyond food trucks, as he has also established a high-end brick-and-mortar concept, which earned numerous “Best of the Best” awards.
The recognition for Mark’s sauces has been outstanding. His creations have scored in the Top 20 world’s best BBQ sauces at prestigious events like The Kansas City American Royal, and he was even honored with the State Flag of Texas from Governor Abbott. Mark’s ingenuity shone through when his sauces emerged victorious in H-E-B Grocery Chain’s highly competitive “Quest for Texas Best,” contest surpassing over 2,500 competitors. Today, you can find his sauce line in over 500 stores nationwide, with new locations being added weekly.
Mark’s culinary achievements, restaurants, and sauces have graced the pages of respected publications such as Edible, Texas Monthly, Austin American-Statesman, Sarasota Magazine, Tampa Bay Business Journal, and The Kansas City Star. The Texas BBQ Posse, a popular blog run by former Dallas Morning News journalists, lovingly dubs him “The Sauce King of Texas.”
